Bob Kitagawa spent many years working in buying, sales, operations and managing seafood in the retail and wholesale operations for more than 35 years. In 2006 while working as Bristol Farms Seafood Buyer, Bob created the poke recipes for the seafood bar in Bristol’s Seafood Department. It quickly became one of the top selling items at Bristol Farms. He was able to anticipate and address issues with working poke production within the seafood department. Identified and corrected potential problems so poke can be produced with the results of a great tasting and safe poke. He also advised Dorothy Lane Markets on making poke for their stores. Gelson’s Markets saw how successful poke sales can be and followed by making and selling poke using a variation of Bob’s poke recipe with the help of Garth Smith (former Bristol Farms co-worker) who put everything together while he was employed at Gelson’s.

While doing import tuna sales, Bob realized there was a great demand for a safe and easy to use poke mix on the Mainland. Understanding the challenges of producing poke at the food service counters of the retail grocer and specialty stores Bob started NoKaO’i Foods which created a poke mix kit that results in a fantastic tasting poke, easy to prepare, and safe to use.
